I have a couple questions actually. I'd love to talk on the phone and see if there's a way to do it.
First, I want to replicate the feature on the sample "Gym Membership" form where I have checkboxes on that let me pick priced features to add on top of a product. I don't want to have an image attached.
Second, I want to keep a running total through different sections. I think this will make more sense to explain over the phone.

Hi Aaron, please find the answers below. Add products with prices You can add products to be sold by quantity, weight or with variants. You can add the name, description, price, upload images, set up taxes and more for a product. Note: If you don't upload a product image, a default placeholder image will be displayed in the form when you use the Compact or Comfortable layout. This default placeholder image will not be displayed in the Default form layout. Cart The cart icon is displayed in the top right corner in the header. When a user clicks on the cart icon, they can review the list of products that they have selected along with the amount. Does this not meet your needs? Please let us know.
